Holding the Line

Hi Everyone,
November is here and we have three brides getting
married this month. Jolene is marrying Doug this
weekend. Amy and Frankie tie the knot in Mexico;
and we finish the month with Colleen and Casey in
Hawaii.
Congratulations November Brides!
Many of the brides who were in class this summer got
together and shared photos from their weddings.
What fun! I hope you all had fun sharing stories and
mugs.
With fall upon us and shorter wetter days, it's often
hard to "hold the line" on your fitness and nutrition
program. This newsletter has some ways to help you
hold on to the habits you have worked so hard to
achieve.

Great minds think alike
I asked both Karen and Jennifer for a recommendation
for a autumn recipe. They both sent "root" recipes.
Great minds think alike....
Autumn Roasted Root Vegetables
Roasting vegetables is easy! All you need to do is
wash, peel, chop, toss with olive oil and herbs and
pop them into the oven.
You can choose a variety of your favorite roots
(organic if possible), such as sweet potatoes,
carrots, turnips, parsnips or beets. My favorite
combination is beets, carrots and sweet potatoes.
You will need:
- 2 large carrots
- 2 large beets
- 1 large sweet potato
- 1 medium yellow onion
- 2 Tablespoons olive oil
- 2 cloves garlic, crushed
- 1 sprig rosemary
- Salt and pepper
Preheat oven to 450 F.
Wash and peel vegetables. Cut everything into
roughly the same size chunks. Cut sweet potatoes
into larger pieces as they cook faster. Toss
vegetables, onion, garlic, rosemary with olive oil in a
bowl to coat lightly. Season with sea salt and
pepper. Put everything into a roomy baking dish.
Bake uncovered for 20 minutes, shaking pan several
times. Reduce heat to 375 F and continue baking
until vegetables are tender (about 20 minutes).
Garnish with toasted pumpkin seeds and a drizzle of
balsamic vinegar.
Root Soup
- 4 c. chopped carrots
- 4 c. chopped potato
- 1 large onion
- 1 tsp ginger (heaping)
- 2 cloves garlic (large)
- 4 Tbls tamari
- 2 Tbls tahini
- Salt and pepper to taste
Boil potato and carrot until tender, about 15 minutes
or so. Reserve 1 ˝ cups of boiled potato and carrot
in a different bowl. In a blender, blend together the
remaining boiled potato and carrot along with all the
other ingredients. You’ll have to do this in batches,
unless you have large capacity blender. Add water a
little at a time if the mixture becomes too thick.
Put the blended mixture back in the soup pot. Add
the reserved 1 ˝ cups of boiled potato and carrot to
the blended mixture. Stir thoroughly. Keep warm
until ready to serve.
Serves 6

The Diva Dash and Seattle Half Marathon |
|

Come out and enjoy a race this fall! It will help you
stay motivated and also provide some great fun.
The Diva Dash is on December 2nd, 2006 and is held
at Seward Park at 9am. It's a very fun, very cute
5K. There will be more details next month, but it's
not too soon to start training - especially if it's your
first race. Monies go to a great organization "Girls on
the Run". Let's get a

The Seattle Half Marathon is a great way to work off
that Thanksgiving Day meal! The race is on Sunday,
November 26, 2006 at 7:30am.
So far we have Christi, Karen,Rae, Naomi, Becky,
Ann, Annika and Sarah committed. Join us!

Bottom line: You will want to start your training now
for the 5k, if you are not up to running 13 miles, you
can walk the course, or just come out and cheer!
