Baked Macaroni and Cheese with Steamed Broccoli

A Healthy Recipe for your Wedding Weight Loss Program

Makes 8 servings

3 cups low-fat cottage cheese
3 cups 1% milk
2 tablespoons Dijon or spicy brown mustard
¼ teaspoon cayenne pepper
½ teaspoon salt
½ teaspoon black pepper
1 small onion, chopped finely
1 pound whole wheat elbow macaroni
2 cups (8 ounces) your favorite shredded cheese (goat's Monterey or sharp cheddar taste wonderful in this dish)
½ cup Parmesan cheese

Preheat oven to 375 degrees. In a food processor or blender, mix cottage cheese, milk, mustard, spices, and salt. Transfer mixture to a large bowl and stir in onions and shredded cheese. Spray a rectangular or square glass baking dish with sunflower oil spray (or any non-stick spray). Pour mixture into baking dish and top with Parmesan cheese. Bake for 40-45 minutes, until topping is slightly browned.

For broccoli:
3-4 heads fresh broccoli, chopped
Steam chopped broccoli in steamer basket until broccoli is bright green. Try to have at least one cup of cooked broccoli with your meal.
