Waldorf Salad

For Healthy Brides and Healthy Wedding Weight Loss

Makes 4 servings

2 cups yogurt
2 teaspoons honey
¼ teaspoon nutmeg
¼ teaspoon cinnamon
Juice of 1 lemon (approximately 3 tablespoons to ¼ cup)
1 granny smith apple, cut into small chunks
2 Braeburn or pink lady apples, cut into small chunks
3/4 cup walnuts
½ cup dried unsweetened cherries or raisins
2 medium stalks celery, chopped finely
Combine yogurt, honey, nutmeg, and cinnamon in bowl. Combine apple chunks with lemon juice to prevent browning. Toss yogurt mixture with apple chunks, walnuts, dried fruit, and celery. Serve with a hardboiled egg and some fresh veggies.

4 large eggs, preferably local and free-range
Place eggs in saucepan and add enough water to cover eggs. Place on stove, turn on heat, and bring to a boil. After water is boiling, place cover on saucepan, and turn heat off and remove saucepan from burner. Let eggs cook in pan for 15 minutes.
 
1 egg is a serving.

16 medium-sized celery stalks (in addition to those in recipe above)
Approximately 40 baby-cut carrots
Serve celery and carrots with hardboiled eggs and Waldorf salad. Four celery stalks and 10 carrots is a serving.
